The best part about owning my air fryer is that it can literally cook anything. I’ve tried out hundreds of delicious recipes and have yet to be disappointed. And as this recipe for air fryer chicken enchiladas shows, using your air fryer is ALWAYS the best option. If you like a little crunch with your enchiladas, the hot air of the air fryer is going to give you just that. While the middle of the tortilla is creamy and delicious and full of ground chicken breasts, the outer layer has a nice texture that pairs up perfectly. Top it with as much shredded cheese as you want, and you’ll be in flavor town heaven! The next time you’re craving a recipe that encompasses different cultures, this simple enchilada recipe needs to be on your radar. You can even have the kids jump in and help out, too! Enchiladas in the Air Fryer

Keep in mind that this hearty recipe takes minimal time and effort. That leaves time leftover to make a homemade pico de Gallo or even a homemade enchilada sauce as well! (I love green enchilada sauce as it’s super tasty and a fun color addition!) You’ll find that making this easy enchilada casserole dish makes for super easy clean-up in your air fryer oven, too. How To Make Enchiladas in the Air Fryer

NOTE: Make sure to put the folded side down in the air fryer so that it keeps the goodness inside as it cooks! This recipe was made with a 1700 watt basket style 5.8 qt Cosori air fryer. If you’re using a different brand of air fryer, you may need to adjust the cooking times accordingly.

Variations

If you want to change up the flavors of these delicious enchiladas, you can turn these into air fryer cheesy ground beef enchiladas by changing out the chicken to beef. I tend to go back and forth between beef and chicken because I’ll buy whatever is cheaper at the store. I can say that air fryer cheesy beef enchiladas are really good, too! You can add some Mexican rice to the mixture if you’d like, or just keep it as a separate side dish as well. Minute white or brown rice is fast and always pairs well. If you want to make this low carb, use zucchini strips in the place of tortillas! This really is really versatile and easy to change up. This is also a great way to add more veggies into the day!

What toppings can you add to these enchiladas?

I’m all about the toppings! I like to add some heat and sprinkle on a tad bit of chili powder or red pepper flakes to my portion once it’s served up. You can also add fresh jalapenos, fresh cilantro, and even chopped green onions.

What side dishes pair well with chicken enchiladas?

I always have rice, refried beans, or even a yummy side salad as a lighter option. You don’t have to worry about making anything too heavy or large because this comfort food recipe will be filling your belly full!

What other sauces can you use besides enchilada sauce?

If you’re on the hunt for a delicious, delicious sauce to add, use what you love! If you just want to top with salsa, do so. I think that a nice guacamole mixture would also be really good right on top. Since the flavor is “taco,” anything that you’d typically add to your tacos will taste great with these enchiladas.

How do you store leftover enchiladas?

All you need to do to store these enchiladas is let them cool down completely and then store them in an airtight container. When it’s time to reheat, you can do so in the air fryer or in the microwave for a fraction of time time. Keep in mind that when you reheat in the microwave, you won’t have that crisp texture that you get with the air fryer. Regardless, it’s still good, but it comes down to your preference.
