These fun puff pastry wrapped cheese mummies are not only cheesy-licious but very easy to make! They are sure to be the hit of your Halloween party!

It’s that time of the year again! Halloween! The grocery stores look like a candy factory exploded, people are carving pumpkins (except me, cause I suck at it!) and we are all thinking of what costume we are going to buy/make/put together at the last minute so we can get drunk at some Halloween party. Well, this year I’m ditching the Halloween soiree in lieu of trick or treating with my baby! ? Except, we live in a building and there’s not really any trick or treating happening, so we are going to attend our town’s Trunk or Treat instead. Oh, it’s going to be lots of fun! And in case you’re wondering, Rebecca is going to be dressed as a… ???  Just kidding! I’m not telling you. You’ll have to wait to see the adorable pictures of her Halloween costume! I might do a ‘Beyond the Kitchen’ post just so I can overload it with a bunch of adorable baby photos.

But just because I’m now a boring mom, doesn’t mean that I don’t get to enjoy Halloween party food. After all, I might not host a party, but I do own a food blog and someone, somewhere, will be hosting one and will be searching for delicious and spooky recipes. Therefore, I’m having fun creating Halloween recipes and cocktails (and enjoying them all by myself). These Baked Cheese Mummies were my weekend project. They are a twist of my favorite appetizer: the Brie en Croute. I love it so much that I make one for Thanksgiving and one for Christmas every single year! But unlike the baked brie, which is so epic that it works as a table centerpiece, I wanted the mummies to be one bite wonders that people can serve to both kids and drunk guests (I know whatcha thinking: they are like the same thing! ?) – depending on what kind of party you’re throwing.

All I did was brush some Mini Babybel® cheese with honey, wrapped with puff pastry and finished off by brushing with an egg wash for color. Off to the oven they went, until the cheese was melted and the mummies were golden brown. The final touch were the cute spooky eyes that I bought at a cake decorating store, but you can use mini chocolate chips if that’s what you have. Seriously, couldn’t get easier than that! Unless you want to just snack on the cheese. Been there, done that! I simply adore Babybel® cheese, all 6 varieties. They are my go-to snacks. Not only they are delicious but they’re 100% real cheese and a great source of calcium and protein for the whole family! And have you seen their Halloween packaging? Adorable! So, yeah… buy at least two packages, cause I guarantee you won’t resist snacking on those as-is!

And even if you don’t plan on hosting a party, make these Baked Cheese Mummies. Even if just as a spooky Halloween afternoon snack for the family! I must warn you though… They are ADDICTING! Before Tim got home I had already gobbled FIVE. And I’m supposed to be on a diet! So I begged him to take whatever was left for work the next day. Out of sight, out of mind, I guess… Except here I am, reminiscing on how amazing they were. Sigh! I suppose I’ll just have to make them again. Who knows? Maybe there will be some left to give to the kids at trunk or treating! ??? P.S. Remember to take advantage of the great deals Target has on Mini Babybel® throughout October.
